
Valentine's Day is right around the corner which means it's time for some themed sweets! I love themed sweets almost as much as I love miniature sweets, and this recipe encompasses both of those, so that's a big win in my opinion.
These strawberry swirl cheesecake bites are deliciously creamy with a perfect crunchy, crumbly crust.

With cheesecake, the crust is just as important as the cheesecake mixture, and this one is spot-on. Brown sugar really gives it the extra flavor it deserves.
Plus, the natural strawberry flavor swirled into the cheesecake gives it such a wonderful mild fruity flavor that really brightens it all up. It is completely optional, but it was definitely bomb.
Strawberry Swirl Cheesecake Bars
INGREDIENTS
For the crust:
- 10 plain graham crackers crushed
- ½ cup butter melted
- 1 tablespoon light brown sugar
- 1 tablespoon granulated sugar
- Pinch of salt
For the filling:
- 2 8 oz packages of plain cream cheese room temperature
- 2 tablespoon sour cream room temperature
- 2 eggs room temperature
- 1 ½ teaspoon vanilla extract
- ½ cup granulated sugar
- Pinch of salt
For the strawberry topping:
- 10 fresh strawberries
INSTRUCTIONS
- Preheat oven to 350℉
- In a medium bowl, combine the crushed graham crackers, melted butter, light brown sugar, granulated sugar, and salt.
- In a lined 8 x 8 baking pan, lay the crust and pack until firm
- Pre-bake crust for 8-10 minutes -- allowing to cool when taken out.
- While the crust is in the oven, in a medium bowl combine cream cheese, sour cream, eggs, vanilla extract, sugar and salt.
- Once the crust is cooled, add in the cheesecake mixture.
- For the strawberries, remove the steps and cut into quarters. In a small pot on the stovetop, cook them for about 10 minutes until the juices come out, squishing them along the way. Pour mixture through a fine mesh strainer.
- On top of the cheesecake mixture, drizzle the strawberry and gently swirl into ribbons.
- Bake for 40 minutes. Allow to cool to room temperature for 1 hour, then chill in the fridge for 4 hours before serving.
