Creamy Butternut Squash Sauce with Fettuccini

This Creamy Butternut Squash Sauce is a delicious vegetarian sauce that's incredibly easy to make. Simply roast vegetables and blend it all together! 


Roast the vegetables. Toss the squash, onion, and garlic with olive oil, salt, pepper, and the spices and roast until tender.


Blend to make the sauce. Blend together the roasted vegetables, vegetable broth, and cream until smooth.


Cook the pasta and combine with the sauce. Cook the pasta in salted water to al-dente and combine with the sauce and parmesan cheese.
