Preheat oven to 350℉.
Core apples and cut into ¼ inch thick slices.
In a bowl, combine brown sugar, lemon, cinnamon, vanilla and nutmeg — add the sliced apples and toss to combine.
Unfold pie crust and place apples in the center leaving approx. 2-3 inches around the edge. I personally tried for a circular design laying the apples overlapping and flat.
Drizzle about 1 - 2 teaspoon of the extra “sauce” over the apples.
Fold up the edges of the pie crust — they’ll overlap a little — and bake for 40 minutes.
For the maple glaze, combine the powdered sugar, maple syrup and milk — whisk until smooth and creamy!
When the galette is done baking, let cool a bit and serve with a scoop of vanilla ice cream and drizzle with the maple glaze.
