Preheat your oven to 350℉ and prep a loaf pan by greasing it and lining it with parchment paper.
In a sauce pot, bring the apple cider to a boil and reduce to a simmer. Continue to simmer for 8-10 minutes, until reduced by half - ending with ¾ cup.
Combine all dry ingredients in a bowl - flour, baking powder, cinnamon, nutmeg, salt. Mix to combine.
Combine all wet ingredients into a separate bowl - apple cider, granulated sugar, brown sugar, eggs, canola oil, and vanilla. Whisk to combine.
Pour the dry ingredients into the wet and mix together until just combined. Pour into your loaf pan, and sprinkle 1 tablespoon granulated sugar and ½ teaspoon cinnamon evenly on top.
Bake for 45-55 minutes, until a tester/tooth pick comes out with little to no crumbs. Allow to cool slightly before removing from the pan.
