If I could, I would declare this Spiced Apple Cider Loaf Cake THE loaf cake of fall. With reduced apple cider (aka ultra flavorful), plenty of cinnamon and nutmeg, a tender, moist cake - it's just so delicious. You're going to fall (haha) in love with this one, promise.

- Apple cider
- Cinnamon
- Nutmeg
- All purpose flour
- Baking powder
- Granulated sugar
- Light brown sugar
- Eggs
- Canola oil
- Vanilla extract
IS REDUCING THE APPLE CIDER NECESSARY?
Short answer: yes! Reducing the apple cider condenses the flavor and produces a stronger cider flavor. Without doing this, you likely won't taste any cider in your loaf. It's painless and worth it step!
KITCHEN EQUIPMENT YOU'LL NEED
- Sauce pan

- Parchment paper
- Measuring cups
- 2x medium bowls
- Spoon or spatula
HOW TO MAKE THIS LOAF CAKE
Step 1: Preheat your oven to 350℉. Reduce the apple cider by half. Do so by bringing it to a boil on high heat and then reducing to a simmer on medium-low heat for about 8-10 minutes.
Step 2: Combine all dry ingredients in a bowl - flour, baking powder, cinnamon, nutmeg, salt. Mix to combine.
Step 3: Combine all wet ingredients into a separate bowl - apple cider, granulated sugar, brown sugar, eggs, canola oil, and vanilla. Whisk to combine.
Step 4: Pour the dry ingredients into the wet and mix together until just combined. Pour into a greased + lined loaf pan, and sprinkle with 1 tablespoon granulated sugar and ½ teaspoon cinnamon. Bake for 45-55 minutes, until a tester comes out with little to no crumbs. Allow to cool slightly before removing from the pan.

Instructions
- Preheat your oven to 350℉ and prep a loaf pan by greasing it and lining it with parchment paper.
- In a sauce pot, bring the apple cider to a boil and reduce to a simmer. Continue to simmer for 8-10 minutes, until reduced by half - ending with ¾ cup.
- Combine all dry ingredients in a bowl - flour, baking powder, cinnamon, nutmeg, salt. Mix to combine.
- Combine all wet ingredients into a separate bowl - apple cider, granulated sugar, brown sugar, eggs, canola oil, and vanilla. Whisk to combine.

I want to make this but my grocery store only has apple juice! Can I substitute or is apple cider a must?

Hi Sarah! Thanks for asking - I wouldn't necessarily recommend it, however if you really can't get your hands on apple cider I'd say it's worth a try! Just make sure it's unsweetened apple juice and perhaps pull the sugar back a smidge (not too much though because it'll throw off the texture of the cake). Let me know how it goes if you try it!

This sounds delicious! Could I use mini loaf pans (5 1/2 x 3″ size) to make this? Would you suggest about a cup of batter in each? I'd love to make it for neighbors and family. Thank you!! 🙂

Yes absolutely! As for how much, it's hard to say without knowing the size of your mini loaf pans, so I'd say just leave about an inch at the top. Hope everyone loves them!!

I haven't! I'd maybe do 3/4 cup chopped pretty small, since they let off a good deal of moisture.
