Spiced Apple Cider Loaf Cake

This spiced apple cider loaf cake is a perfect quick bread for fall. With delicious apple cider, warm fall spices such as cinnamon and nutmeg, and a perfect moist texture, it can't get better.

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon kosher salt
  • 1 ½ cups apple cider reduced to ¾ cup
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 large eggs room temp
  • ½ cup canola oil
  • 1 teaspoon vanilla extract

For sprinkling on top:

  • ½ teaspoon cinnamon
  • 1 tbsp granulated sugar

Instructions

  • Preheat your oven to 350℉ and prep a loaf pan by greasing it and lining it with parchment paper. 
  • In a sauce pot, bring the apple cider to a boil and reduce to a simmer. Continue to simmer for 8-10 minutes, until reduced by half - ending with ¾ cup.
  • Combine all dry ingredients in a bowl - flour, baking powder, cinnamon, nutmeg, salt. Mix to combine.
  • Combine all wet ingredients into a separate bowl - apple cider, granulated sugar, brown sugar, eggs, canola oil, and vanilla. Whisk to combine.
  • Pour the dry ingredients into the wet and mix together until just combined. Pour into your loaf pan, and sprinkle 1 tablespoon granulated sugar and ½ teaspoon cinnamon evenly on top.
  • Bake for 45-55 minutes, until a tester/tooth pick comes out with little to no crumbs. Allow to cool slightly before removing from the pan.
