
I love plums. However, it wasn’t until the past year or two that I started to really dig them. But only when they’re firm. If they’re squishy, I skip to the next — and when I found out my dad does the same, well, figures.
Ricotta cheese is another love of mine. Probably because I’m a big pasta gal. It’s perfectly creamy and adds a nice touch to such a wide variety of dishes. About two years ago, I was introduced to ricotta toasts drizzled with honey and I was hooked. I swear I ate far too many in one sitting.

When you merge these two loves of mine onto one toast, it’s sweet little heaven. This toast with ricotta, honey, pistachios, and plums is one I’ve been often craving recently. The sweet and tart flavor of the plum with the crunch of pistachio, creamy ricotta, and sweet drizzle of honey - yum!
It also makes a perfect quick and simple appetizer if you’re serving a crowd? It’s easy peasy to assemble.

Ricotta Toasts with Plums, Pistachios, and Honey
Ingredients
- Loaf of bread of your choice — something relatively firm and not too strong in flavor on its own. A baguette works nicely.
- 15 oz ricotta cheese
- 6-8 plums
- ½ cup chopped pistachios
- Honey for drizzling
- Salt
Instructions
- Cut the bread into slices about ½ - ¾ of an inch thick.
- Cut the plums into thin slices.
- To assemble, layer 1 tablespoon of ricotta cheese on a slice of bread, follow with a few slices of plum, a sprinkle of pistachios, a drizzle of honey and a pinch of salt.
