These Bacon, Egg and Cheese Breakfast Sliders are one of my favorite breakfast recipes for when you’re serving a crowd or want to meal prep. With store-bought rolls, you simply top with fluffy eggs, melty cheese and crispy bacon then bake until the top is deeply golden brown.

- Kings Hawaiian rolls: fluffy, buttery rolls perfect for sliders.
- Eggs: 8 large eggs scrambled.
- Pepper jack cheese: creamy and a little spicy, the perfect kick to amp up the flavors.
- Shredded cheddar cheese: sprinkled on top of the eggs to make sure they’re extra creamy and cheesy.
- Bacon: 6 slices of standard bacon. Thick cut or any kind of smoked bacon also works.
- Melted butter: salted butter gets melted and poured over the rolls before baking them to make them even more decadent.
- Sesame seeds: a nice crunch and hint of nutty flavor. You can alternatively use everything bagel seasoning.
- Kosher salt and cracked black pepper.
How to make bacon egg and cheese sliders
1. Cook the bacon. Warm a large nonstick skillet on medium heat and cook the bacon until crispy, flipping once halfway through, about 10 minutes. Remove from the pan and set aside. Leave the rendered bacon fat in the pan!
2. Whisk the eggs. Crack all the eggs into a large bowl. Add the salt and pepper, then whisk to combine well.
3. Scramble the eggs. Lower the skillet to medium-low heat. Add the egg mixture into the bacon fat that is left in the pan and gently scramble until just set and still a little wet. About 5 minutes.
4. Slice the rolls. Slice the bread in half lengthwise using a sharp serrated knife. Place the bottom half of the rolls in a baking dish.
5. Layer the sliders. On the bottom of the rolls, layer the cheese slices, followed by the scrambled eggs, then shredded cheddar, and finish with the cooked bacon strips.
6. Top with butter and sesame seeds. Put the top half of the Hawaiian rolls on. Then pour the melted butter over top and sprinkle with sesame seeds.
7. Bake. Put into a preheated oven at 350°F for 10 minutes until deeply golden brown.
Ingredient substitutions
- For a milder flavor instead of pepper jack cheese you can use American cheese, colby jack cheese or provolone cheese.
- You can add a sauce (e.g., ketchup, spicy mayo, aioli, etc.) to these sliders if you want; put it under the first layer of cheese.
- Amp up the flavor on top of the rolls even further by adding some garlic powder to your melted butter to make a garlic butter topping.
- If you want to add some veggies to this, I suggest sautéing some onion and bell pepper to add on top of the scrambled eggs.
Tips and tricks
- Don't overcook the eggs in the skillet because they’ll continue to cook in the oven.
- Use parchment paper or nonstick spray in the baking dish if it's not a nonstick dish.
- If your bacon has too much grease for your liking, when you remove it from the skillet put it on paper towels to absorb the excess grease.
- Keep a close eye on the sliders when they’re in the oven because they can burn. If they do start to burn cover them with aluminum foil.
What to serve with breakfast sliders
Breakfast sliders are a great well-rounded breakfast for busy mornings or serving a crowd that are sure to fill you up. But if you’re serving a crowd and want to have a few additional items on the table I recommend the below:
- Berries and citrus
- Light salad
- Overnight oats
- Yogurt and granola
Meal prep instructions
A great thing about these bacon egg and cheese sliders is that they're great for breakfast meal prep. Make them according to directions then let them cool and wrap each breakfast slider individually. Store in the freezer in airtight packaging. To reheat them, warm in the oven at 325°F for ~10 minutes or a few minutes in the microwave.
Storage and reheating
- Storage: For easy storage I like to keep everything in the baking dish and put that right in my fridge. However, if there’s only a few left, put them in a smaller airtight container and keep in the fridge for up to 4 days.
- Reheating: These are best warmed in the oven at 325°F for 10-15 minutes or in the microwave for 2-3 minutes (depending on the strength of your microwave).

Sure! Just skip the meat or use a vegetarian sausage (e.g., beyond meat).
Absolutely. If you use sausage I would recommend sausage patties or ground sausage. If you use sausage links just cut them in half lengthwise so they lay somewhat flat.
Yes, just don’t bake them yet. Store covered in the fridge and then bake before serving.
You can, but you might have a harder time keeping everything in the sliders. If you have an oven safe glass dish that works as an alternative.
