    Garlic Roasted Green Beans

    These Garlic Roasted Green Beans are a super easy vegetable side dish with so much flavor that you'll want to put in your regular rotation. Just 6 ingredients including salt, pepper and olive oil. It’s a great healthy side dish to serve alongside any main dish – from pasta to meat – at a dinner party, holiday table, or for an easy weeknight dinner. This recipe will even convert those who aren't a fan of green beans!

    Ingredients

    The ingredients for this garlic green beans recipe are below, quantities in the recipe card. 

    Ingredients for green beans.
    • Green beans: Basic fresh green beans (aka string beans) are what you need for this recipe. I prefer to cut off the ends of the green beans because I find they can be a bit tough, but that is personal preference.
    • Garlic: Plenty of garlic – seven cloves – gets sliced and used in this recipe. Sliced is important so it doesn’t burn in the oven (if it’s chopped too small it’ll burn). The roasted garlic gets slightly caramelized and crispy, it's possibly the best part. 
    • Salt: Kosher salt. 
    • Pepper: Fresh cracked black pepper.
    • Olive oil: Extra virgin olive oil to bring a subtle flavor. 
    • Parmesan cheese: For serving, sprinkling of coarse grated parmesan cheese is the perfect touch.

    Step by step instructions

    See below for step by step instructions with photos for reference of how to make these roasted green beans, super easy with very minimal prep time this recipe is a great way to get some vegetables on the table.

    1. On a parchment lined baking sheet, toss the green beans with the garlic, kosher salt, black pepper, and extra virgin olive oil. Spread out to a single layer.

    2. Roast in a 425°F oven until tender and the garlic is golden brown.

    3. Serve with parmesan cheese. 

    Ingredient substitutions

    • If you don’t have fresh garlic, I’d suggest using 1-2 teaspoon garlic powder. 
    • Haricots verts would also work in place of green beans.
    • Instead of green beans you can use quartered brussels sprouts.
    • Instead of parmesan cheese you can use a crunchy salty nut like chopped almonds or pine nuts.

    Tips and tricks

    This easy side dish of garlic roasted green beans doesn't get much more straightforward, but check out the tips and tricks below if you have any qualms. 

    • You can make this on the stovetop instead, just sauté everything together on medium heat instead of roasting. Start with just the green beans in a pan with the olive oil for a few minutes, then add the garlic for the last few minutes so it doesn’t burn.
      • I wouldn't recommend making this recipe in the air fryer with fresh garlic – the garlic will burn. 
    • Make the recipe a little spicy by adding some red pepper flakes. 
    • If you're particularly fond of it, a squeeze of fresh lemon juice and a sprinkling of flaky salt would be delicious on top. 

    Storage and reheating

    • Store in an airtight container in the fridge for up to 4 days.
    • Reheat for a few minutes in the microwave until warmed through. However these are great at room temperature so dont feel the need to get them scalding hot.

    Can I eat green beans raw?

    Sure! If you like that crunch, you can sauté the garlic in the olive oil then toss with the raw green beans, salt, and pepper.

    Can I use frozen green beans?

    Yes, just defrost them first.

    • 12 oz green beans trimmed
    • 8 cloves garlic sliced
    • 1 teaspoon kosher salt
    • ½ teaspoon black pepper
    • 1 tbso extra virgin olive oil
    • 2 tablespoon grated parmesan cheese

    Instructions

    • Preheat your oven to 425°F.
